For a short time only, Qavalli is hosting a gourmet festival called Nazm-e-Nizam: The Royal Table of the Nizams. This event will celebrate the culinary traditions of the Nizams of Hyderabad. The New Delhi restaurant will host the festival from June 15th to July 30th, 2026.
Recipes from colonial India, Bengal, Persia, Hyderabad, and Andhra Pradesh are all part of the festival’s exploration of the culinary influences that formed the Asaf Jahi dynasty’s royal kitchens.
Some of the appetisers available on the special menu include: Guntur Chilli Paneer, Apollo Prawns, Talawa Gosht, Shikampuri Kebab, Chenna Matar Pasanda, and Hyderabadi Lukhmi. The main courses include dishes like as Bagara Baingan, Mirchi aur Paneer Ka Salan, Daalcha Gosht, Andhra Mutton Pepper Fry, Dak Bungalow Chicken Curry, and Chingri Malai Curry.
A highlight of the occasion is still the biryani, which visitors can pick between two varieties: Kolkata Mutton Biryani and Hyderabadi Chicken Biryani made in the classic kacchi style. Bhapa Doi, Khubani Ka Meetha, Gil-e-Firdous, and Poda Rossogolla are among the dessert options.
The story of Hyderabadi food is one of cultural interaction, refinement, and exceptional culinary growth,” Chef Aman Dhar said while speaking about the festival. The culinary legacy of India is defined by the delicacies that emerged from the Nizams’ kitchens, which fused flavours from all over the world, including Persia, the Deccan, Bengal, and more. Our hope was that Nazm-e-Nizam would pay homage to historical customs while also appealing to modern palates. We are thrilled to offer our visitors at Qavalli the classic flavours that have been passed down through the centuries in each dish on our menu.
