Executive Chef Ankur Gulati of The Claridges New Delhi shared, “We have enthusiastically integrated millets into our diverse menus. From European classics like risotto and pasta to Mexican favourites such as enchiladas, millets will play a starring role.”

Within the realm of Indian cuisine, expect to relish dishes like poha, khichdi, ragi dosa, and puris, among an array of other choices. Acknowledging the global shift toward vegetarianism and veganism, Gulati and his team have thoughtfully curated ‘thalis’ or platters to cater to these dietary preferences.
While The Claridges New Delhi buffet offered a wide spectrum of both vegetarian and non-vegetarian dishes, the establishment was set to unveil four special ‘thalis’ for their esteemed guests, including the Dev Bhoomi Thali, Marwadi Thali, Jain Thali, and Gujarati Thali. These culinary journeys featured culinary treasures such as pahadi chainsoo from Uttarakhand, gutta curry from Rajasthan, dahi kebab, khandvi, and much more, as per Chef Gulati.

Gulati added, “The Claridges New Delhi is renowned for its culinary prowess, and we are committed to showcasing our culinary excellence to our esteemed guests. A dedicated team of approximately 100 chefs was diligently toiled for over a month to perfect these menus.”

To elevate the dining experience, The Claridges New Delhi sourced the finest ingredients from around the world, including artisanal bread, premium cheeses, gourmet butter, Italian cold cuts, caviar, seafood, and champagne.
